Introduction

Upon completion of this unit of competency ("unit"), FDFCORFSY2A Implement the food safety program and procedures, you will have the appropriate skills and knowledge to maintain personal hygiene standards, personal conduct within the workplace, food handling requirements, housekeeping and waste disposal standards relating to work tasks and responsibilities where work involves the operation of production and/or packaging equipment and processes.

This unit or 'competency standard' is a core unit of the FDF20103 Certificate II in Food Processing, a nationally recognised qualification in the Australian Qualification Framework (AQF). An operator in a food processing plant would be awarded this qualification.

Please note:

  • Your company's Food Safety Program is the basis for information regarding the prevention and control of food safety hazards in your workplace. Therefore, these learning sections should be delivered with an emphasis on the relationship between each learning activity and your Food Safety Program.
  • Food safety hazards will vary depending on where the learner works i.e. in what section of the manufacturing process. The learner may work in any of the following areas:
    • Materials/Ingredient receival
    • Materials/Ingredient storage
    • Product processing
    • Product packaging
    • Finished Product storage and distribution
